This is a light amber to white honey (white when it crystalizes). It carries a strong fruity flavor. There is a faint lemon aroma and taste. The first taste that most people recognize in it is, oddly enough, buttercream. The flowers blossom in May so the availability of Lemon Blossom is limited (like most of our single pollens) so if you've tried it before, snatch it up - because it doesn't last. One last thing, Lemon Blossom, like Mango & Melochia Blossom is prone to spontaneous crystallization (nothing a hot water bath wouldn't fix).
