Our filtered clover and wildflower honey is still technically raw as we do not pasteurize it – just like the straight raw product. We simply hold the temperature in the storage tanks after we extract it. As we extract in the Summer, the standing temperature averages 80 degrees. After 2 weeks at this temp, it retains all of it’s enzymes and pollen integrity as well as it’s liquid state. We then filter out excess wax and bottle it.
