Monkey Pod Blossom Honey — A Taste of Hawaii
Monkey Pod trees bloom in spectacular fashion — their flowers look like delicate pink powder puffs, bursting to life at the end of the dry season alongside fresh new foliage. Flowering peaks in spring, though a tree may bloom in almost any month of the year.
How Does It Taste?
Not unlike maple syrup. This is a deep amber honey with a rich, caramel-esque sweetness and strong maple undertones. Somewhat similar to our Mango & Melochia Blossom, but with a more pronounced, woodsy depth that sets it apart.
Best Uses
- Pancakes & waffles — a natural maple syrup substitute with more complexity
- Oatmeal or granola — drizzle for a warm, caramel-forward sweetness
- Aged cheeses — pairs beautifully with sharp cheddar or gouda
- Glazed carrots or roasted sweet potatoes — a stunning finishing drizzle
- Straight from the spoon — because it's that good
